How to make Lahori Chicken Karahi:



I first tasted this dish many years ago while accompanying my hubby on one of his Pakistan trips. In the northern areas of Pakistan, we found many small dhabas/khokhay serving this delicious Chicken Karahi. At one dhaba in Lahore we could watch them cook this. They make it for you as half dish or full dish using half or full chicken respectively. The chicken karahi-walla stands at his kiosk, in a swirl of heat and smoke. You watch him as he adds chopped chunks of green chili to make the dish smolderingly hot. As soon as the karahi is placed in front of you, you ravenously tear off soft, chewy, white pieces of tandoori naan, to mop up that unctuous juice of the karahi-spiced oil running away from the tomatoes. For all the food found, the chicken karahi, to me, was Lahore’s star culinary attraction.
It is EXTREMELY easy to prepare .I have got a lot of compliments for this dish. Try it out and you will be amazed by the taste and the preparation time…. And yes you might have second thoughts about the Chicken Kadai made here!!

Lahori Chicken Karahi

Ingredients
500 gm chicken
3 medium to large red tomatoes
1” piece of ginger julienned
1 tsp ginger paste
3-4 green chilies
¼ cup curd whisked
1 tsp salt
1 tsp red chili flakes
1 tsp coriander pwd
½ tsp black pepper powder
¼ cup oil
fresh green coriander finely chopped

Procedure
• In karahi heat oil, add chicken, salt and ginger paste.
• Fry the chicken until it becomes nicely golden, about 10 to 15mins.
• Fine chop the tomatoes and green chilies
• Add tomatoes along with half of ginger jullienes in chicken and also add the spices
• Set the flame on medium.
• Cook the chicken by shaking the wok as u have seen doing in restaurants
• Once the tomatoes get dried off add the curds and green chillies.Let it cook on dum for 5-6 min.
• When oil gets separated add in the chopped coriander, ginger jullienes and turn off the heat.
• Yummy karahi is done
